Lime-Cilantro Vinagreta (Aderezo de Limón y Cilantro)

Rick Bayless’s signature dressing from Mexico — One Plate at a Time, Season 7. A Frontera Grill staple.
Ingredients (~250 ml)

| Vegetable or olive oil | 150 ml |
| Fresh lime juice (~4–5 limes) | 65 ml |
| Lime zest | 2 g |
| Fresh cilantro, packed | 20 g |
| Serrano chile (or 1 jalapeño), roughly chopped | 8–15 g |
| Fine salt | 4 g |
Method
Combine all ingredients in a blender. Blend until smooth and emulsified with tiny green flecks. Taste, adjust salt. Keeps 5 days refrigerated. Shake before serving.
