Lime-Cilantro Vinagreta

Rick Bayless’s signature dressing from Mexico — One Plate at a Time, Season 7. A Frontera Grill staple.

Ingredients (~250 ml)

Vegetable or olive oil150 ml
Fresh lime juice (~4–5 limes)65 ml
Lime zest2 g
Fresh cilantro, packed20 g
Serrano chile (or 1 jalapeño), roughly chopped8–15 g
Fine salt4 g

Method

Combine all ingredients in a blender. Blend until smooth and emulsified with tiny green flecks. Taste, adjust salt. Keeps 5 days refrigerated. Shake before serving.

Pairs with: Mixed greens, jicama, grilled chicken.
