Cilantro-Lime Dressing

Perhaps the most ubiquitous Mexican-inspired dressing in North America. Cross-referenced across multiple well-tested sources.

Ingredients (~250 ml)

Fresh lime juice (~8–10 limes)100 ml
Fresh cilantro, loosely packed30 g
Honey or maple syrup15 g
Dijon mustard5 g
Ground cumin1.5 g
Fine salt3 g
Garlic clove (small), chopped3 g
Jalapeño, seeded and chopped (optional)8 g
Tahini or Greek yogurt (optional, for creaminess)30 g tahini or 60 g yogurt

Method

Combine all in food processor or blender. Process until smooth. Keeps 1 week (3–4 days with yogurt).

Notes

Bold 1:1 oil-to-acid ratio — intentionally more assertive than a French vinaigrette.

Pairs with: Green salads, grain bowls, tacos, grilled meats.
