Cilantro-Lime Dressing (Aderezo de Cilantro y Limón)

Ingredients (~250 ml)

| Fresh lime juice (~8–10 limes) | 100 ml |
| Fresh cilantro, loosely packed | 30 g |
| Honey or maple syrup | 15 g |
| Dijon mustard | 5 g |
| Ground cumin | 1.5 g |
| Fine salt | 3 g |
| Garlic clove (small), chopped | 3 g |
| Jalapeño, seeded and chopped (optional) | 8 g |
| Tahini or Greek yogurt (optional, for creaminess) | 30 g tahini or 60 g yogurt |
Method
Combine all in food processor or blender. Process until smooth. Keeps 1 week (3–4 days with yogurt).
Notes
Bold 1:1 oil-to-acid ratio — intentionally more assertive than a French vinaigrette.
